Abstract
Honduras is among the top five coffee producing countries in the world. Coffee is part of the life of Honduran commerce. The objective of this document is to identify improvements to the production and commercial process of coffee cooperatives, through a systemic approach under the "Katz and Kahn Model", to determine technical specifications, in view of the implementation of a business management system. As part of the methodology, the theory of restrictions was used to observe different abstract, functional and collaborative processes of the cooperative at the time of commercializing coffee. Human resources and coffee growers were identified as the energy inputs with the greatest impact on the system. The business processes of the functional areas of human resources, production and commercialization were modeled, showing the dynamic homeostasis to which the commercialization of coffee by the suppliers and the international price of coffee is subjected.
