Abstract
The objective of the research is to determine to what extent the application of lean Manufacturing influences the increase in productivity in the Pasanni company. The situational diagnosis identified problems such as 440 minutes per month in waiting times, 156 minutes in unnecessary transportation, over inventories and defects in finished products, impacting operational efficiency. To improve processes, tools such as Kanban, Value Stream Mapping (VSM), improvements in the Layout and the 5S philosophy were implemented, achieving an 80% reduction in waiting times, 94.8% in unnecessary transportation and 74.3% in excess inventories, in addition to an increase of 3.8% in efficiency and 2.53% in effectiveness. These results confirm that Lean Manufacturing is an effective strategy to increase productivity in the baking industry.
