Abstract

Currently, innovation applied to any productive sector, and even the educational sector, evokes a multiplicity of definitions that can cause confusion among the actors involved in the process. The objective of this study is to analyze and systematize the existing literature on the different approaches to innovation in the food industry. A bibliographic search was carried out using scientific databases and studies carried out on the global innovation index, technological and organizational innovation, competitiveness and development of new products were collected. The results show the evolution that the word “business innovation” has had in recent years, and its importance to achieve competitiveness and social benefit. It is concluded that innovation is a booming topic for global markets and is achieved with ideas that generate value implemented in the different managerial, commercial, organizational and technological areas of the food industry.
