Abstract

This review article analyzes the implementation of digital technologies in the food industry. It highlights that companies in the sector face challenges related to the low implementation of technology, which is an obstacle to their development and competitiveness. Therefore, in this research it was decided to conduct a systematic review of the literature, obtaining 44,411 articles through database searches. Likewise, the PICOC algorithms and the PRISMA method were used, which made it possible to identify 30 relevant articles to form the synthesis of the research. The results obtained from the analysis were that the implementation of digital technologies, such as artificial intelligence, Big Data, machine learning and Internet of Things, is presented as an advantageous opportunity for the Peruvian food industry to be more sustainable over time. In addition, according to the analysis of studies these technologies can have a positive impact on operational efficiency, reduction of food waste and improvement of food quality and safety. Therefore, the objective of this research is to provide an overview of the potential impact of digital technologies in the Peruvian food industry.
