Abstract
This study aimed to analyze the antioxidant capacity and polyphenol content of the hard seltzer drink made with Tommy Atkins mangoes collected in the Santa Lucia canton of the province of Guayas-Ecuador. To measure the antioxidant capacity and the concentration of polyphenols, the Ferric Reducing Antioxidant Power (FRAP) method and the Folin-Ciocalteu reagent were used, respectively. The results showed that the drink has a high antioxidant activity of 3,964 μg/mL and a high polyphenol content of 1,558 mg/mL. This study concluded that Tommy Atkins' mango-based Hard Seltzer drink is a healthy choice for consumers as it contains high levels of antioxidants and polyphenols with beneficial effects on human health.
