Abstract
This article shows the implementation of DMAIC (define, measure, analyze, improve, and control) in an Ecuadorian Snack company. The company manufactures vegetable snacks for exportation. The first trimester of 202, the company receives between one and four complaints from their clients per month because of the presence of crumb in the snacks. The objective of this study is to reduce the percentage of crumb in the snacks to maximum 15%. Following the DMAIC method, which stands for Define, Measure, Analyze, Improve, and Control, we collect and analyze qualitative and quantitative process data to identify the root causes and define an action plan for reducing the crumb. We found 4 root causes and for each of them an improvement plan was developed considering the constraints of the company. After implementing the improvement ideas, the presence of crumb in the snacks was effectively reduced.
